Exotic ingredients, complex flavours, wonderful textures and hot hot spices – what isn’t to like about a curry?

Now, we’re not saying that restaurant curries aren’t great but sometimes the brightly coloured, generic sauces are only palatable after a night on the booze – yes there’s a place for everything and getting your laughing gear around a lamb vindaloo at 11.30pm on a Friday night after eight pints of premium larger is definitely up there with life’s best experiences.  But although the star of Bengal can undoubtedly give you a pleasant balti fix when you need one, the best curries are home cooked using fresh, vibrant ingredients and some tender loving care.

Here are some of the basic ingredients you’ll need in your home curry armoury as well as some great recipes for you to try at home.
